Cheesy Ground Beef Quesadillas Recipe

INGREDIENTS

  • -1 lb ground beef
  • -1 medium onion, finely chopped
  • -2 cloves garlic, minced
  • -1 packet taco seasoning (or homemade blend)
  • -1 cup shredded cheddar cheese
  • -1 cup shredded Monterey Jack cheese
  • -4 large flour tortillas
  • -2 tablespoons olive oil
  • -Salt and pepper, to taste
  • -Optional fillings: diced tomatoes, corn, black beans, sliced jalapeños

INSTRUCTIONS

  1. Cook the Beef: In a large skillet, brown the ground beef over medium heat. Add chopped onion and minced garlic. Cook until the beef is no longer pink and the onions are translucent. Drain excess fat.
  2. Season: Stir in the taco seasoning, along with a splash of water. Cook for another 2-3 minutes until everything is well combined. Season with salt and pepper to taste.
  3. Assemble Quesadillas: Lay out the flour tortillas. Sprinkle half of each tortilla with a mix of cheddar and Monterey Jack cheese. Add a layer of the cooked beef mixture. Add any optional fillings you like. Fold the tortillas in half over the filling.
  4. Cook Quesadillas: Heat a teaspoon of olive oil in a skillet over medium heat. Place the quesadilla in the skillet and cook until golden and crispy, about 2-3 minutes per side.
  5. Serve: Cut into wedges and serve hot. You can serve these with sour cream, salsa, or guacamole on the side.
